Day 67

No weight today.. simply because I am too sore to even step up on the scale. Wogging is out, at least for this morning, but if my legs feel better tonight then I will hop on for a mile or two. Yesterdays weight lifting really did a number on my legs.. I knew I was going to be sore this morning so I hopped on the tready last night and did a casual 2 mile walk just to get my blood circulating in my muscles.. I woke up this morning and could barely walk to the bathroom. Hubby says that it is a good sign that I am that sore today.. it means I am doing the workout right.. good grief!

On another note.. Crappity Crappola.. The wicked witch of the, I mean the mother in law called hubby (not me, because she hates me) to tell him that I needed to bring a dessert and a vegetable to Thanksgiving dinner on Thursday. **hmph** I love to cook, but not for that woman's benefit. So I am at a loss.. do I go to the local grocery store and buy a generic pumpkin pie or do I bake a low fat version of one? Do I really want to go to the trouble of cooking?? Eh, not really... especially since the last time I took dessert she didn't even bother putting it out on the table.. and it was a delicious homemade apple pie. Her excuse was that there was no room on the table.. I should have grabbed it and taken it home with us but I forgot. On the other hand.. I could make a low fat dessert and a delicious veggie that I could enjoy with out feeling calorie guilt. I have until tomorrow to decide.. right now I am still annoyed that I'm even having to go. Just in case I do decide to do the cooking, does anyone have a favorite veggie dish that is low fat/ low calorie and is different?? No green bean casseroles please! :)

Today will be a day at the park.. literally. I am taking the girls to the park to get all their energy out.. then hopefully they will take a long nap this afternoon while I clean out their room and get rid of all their old toys. With Christmas coming ( I know they are getting a TON of toys) I need to make room for the new ones. It is hard for me to get rid of their toys... they all have such fun memories.. so I give them to my mom to put in her play room for when they go visit! I'm pathetic.

Yesterday food was ok.. yes, just ok. My downfall? The leftover Ice Cream from the birthday party. The good news is that it is all gone.. so no temptations today. My food plan for the day?

Breakfast: Protein shake with strawberries and blue berries
Lunch: grilled chicken and salad
snack: one cup of cereal
dinner: Pot Roast (in the crockpot)

I am no expert but I dont think being sore from a workout means you are doing it right, if anything I would have thought it means you're overdoing it. Be careful and get enough rest before doing any more on your legs. x

I can't remeber if I have already made this one - I think so, but after the year of farm share it all gets kind of muddled.

Another good vegetable trick is roasted root veggies. The trick is to use a lot of different vegetables. For 4-6 servings:

1 red onion
2 carrots
2 small purple-top turnips
1 medium celery root (aka celeriac)
2 parsnips
about a cup of diced butternut squash.

Peel and dice all the root vegetables. Lay diced root vegetables out in an even layer on a cookie sheet. Spray with olive oil flavored pan spray. Sprinkle with salt, pepper and powdered thyme. Roast at 350F for 20 minutes. Remove from oven, toss with a spoon and add butternut squash. Return to oven and roast until all veggies are tender. Scoop into a bowl and serve.

Everyone loves it - even people who don't like one of vegetables in it will ask for seconds. (I have a turnip-hater who has been converted.) You can make it a couple days ahead and it stays delicious. If you have extra, you can add leftover turkey and a little cornstarch-gravy to it and make pot pie or stew.

You could substitute pumpkin puree for the mango puree that the recipe calls for to make it Thanksgiving-y. Since pumpkin puree is thicker I would use 1 cup canned pumpkin and 1/3 cup water in place of the 1 1/3 cup mango puree. Maybe garnish with some fat-free whipped toppin' and a little cinnamon. Just don't tell them it is low-fat. Tell them it is pumpkin panna cotta (the italian name for gelatin-set puddings)

I agree with Laura...cook for yourself. You'll be happy you did, plus it'll be your little ray of sunshine in an unfriendly enviroment.

I totally understand the MIL trouble..I have one of those too.

Well here's what I would do. Make a great veggie that you can enjoy guilt free...and make a sweet ass dessert, throw a laxative into it - and make sure that no one else eats it but the MIL.

(Ha, can you tell that I have MIL issues? Ha, nooooo)

I would make a low calorie really healthy veggie and buy a pumpkin pie. Whenever I make a pumpkin pie it takes just as good as the store bought one. Oh - you could make a pumkpin pie cheesecake - I listed the receipe on my blog - super easy and super yummy.

An addendum to my earlier post:

If you are doing the Pumpkin Panna Cottas, use those 4 oz clear plastic cups to do them in. If you buy the nicer ones they look pretty good and it makes clean-up and transport really easy - just pack them into a box with a layer of cardboard between each layer of cups.

It looks like we're all in agreement here. Cook some healthy stuff for yourself and if they like it, good. If not, at least you have something you'll feel good about eating.

I'm starting to feel the holiday anxiety over here too. So much pressure to make everyone happy. Ger. I wish I could just flee to Paris and come back Jan 2nd. hee hee.
